Pop-Up Dinner with Chef Steve Sandquist

December 22nd wil see CCAMR host it's first Pop-Up Dinner benefit, hosted by Mary Kalantzis and Bill Cope, featuring guest chef and Champaign native Steve Sandquist of Fairbanks, Alaska. The dinner will be a coursed meal consisting of locally-sourced ingredients in concert with ingredients brought directly from Alaska by Chef Sandquist, and featuring wine pairings from local winery Alto Vineyards. Seats are very limited, and the dinner is $150, with $100 going to
CCAMR's grant fund (tax receipts will be provided for the donation portion), and the remainder to food costs. Tax receipts will be provided for the donation portion of the dinner. Chef Sandquist attended the Cooking and Hospitality Institute of Chicago, going on to work in some of the best restaurants in Chicago. At just 22, he was promoted to Sous Chef at Harvest on Huron which received 4 stars from the Chicago Tribune. His sense of adventure took him to Alaska and the Hotel Captain Cook, where he became the banquet chef. He quickly moved up the ranks to Chef de Cuisine of the Crow’s Nest, one of three Alaskan 4 diamond restaurants, and then Executive Chef overseeing four restaurants, banquets and a staff of 80. For now he has hung up his chef whites and works as the Director of Food and Beverage for the Carlson Center at the end of the road in Fairbanks, Alaska.
